Variations
- Food Coloring. The green food coloring makes it festive but you can omit it if you prefer. It will still look great with the Lucky Charms Marshmallows.
- Sprinkles. Rainbow sprinkles are perfect to add to this dessert for St. Patrick’s Day. Add a handful to the top before it sets once in the pan.
- Chocolate cereal. Chocolate fans might like to try a chocolate version of this dessert. Substitute Cocoa Krispies and Chocolate Lucky Charms for tons of chocolate flavor.
How to make St. Patrick’s Day Rice Krispie Treats
- Step 1. Prepare the pan. Spray a 9X13 pan with a non-stick cooking spray and set aside.
Step 2. Melt the butter and mini marshmallows. Place the butter and marshmallow in a large saucepan and melt butter over low heat. Make sure you stir constantly.
Step 3. Once the ingredients are melted and combined, remove from heat. Add in the green gel food coloring until the mixture is a vibrant green coloring.
Step 4. Gradually stir in the Rice Krispie Cereal and Lucky Charms Cereal. Mix until the cereal is coated in the marshmallow and butter mixture.
Step 5. Spread into the baking dish. Spray a piece of parchment paper with non-stick cooking spray. Use the parchment paper to press the cereal down into the baking dish.
Step 6. Step 6. Top with the additional marshmallows from the Lucky Charms cereal.
Step 7. Let the Rice Krispie treats set for 60 minutes until set. Then slice, serve and enjoy!

Store the leftovers in an airtight container at room temperature for up to 5 days.
We no do recommend refrigerating these Rice Krispie treats as they get brittle and lose their delicious gooey-ness!
Can you freeze rice krispie treats?
Yes, these treats can be frozen. I prefer to flash freeze cut into squares for 1-2 hours and then place in a freezer container.
Another method is to wrap in parchment paper and freeze immediately in a container or bag.
They can be frozen up to 6 months. The texture may change a little bit once frozen but they will still be yummy.
Recipe Tips
- Don’t overcook the marshmallows. Be very careful to only cook the marshmallows as directed. Overcooking the marshmallows will make the mixture very sticky and it will be difficult to set.
- Combine ingredients together quickly. You want to combine everything together before the marshmallows set.
- Top with extra marshmallows. The treats are even more festive with Lucky Charms Marshmallows. Don’t forget to reserve some for the top. They need to be pressed into the top before it sets or they will not stick.
- Press the mixture with parchment paper. The mixture can be very sticky. Spray wax paper with cooking spray or a spatula. Then press into the mixture to even it out.
- Allow to set. The mixture needs time to set before cutting. Attempting this too soon will result in a sticky mess.

- 1 pkg Marshmallows 10 oz
- Green Gel Food Coloring
Instructions
- Spray a 9X13 pan with a non-stick cooking spray and set aside.
- Place the butter and marshmallow in a large saucepan and melt butter over low heat stirring frequently.
- Once the ingredients are melted and combined, remove from heat. Add in the green gel food coloring until the mixture is a vibrant green coloring.
- Gradually stir in the Rice Krispie Cereal and Lucky Charms Cereal. Mix until the cereal is coated in the marshmallow and butter mixture.
- Press the mixture into the 9X13 pan or baking sheet. I spray a piece of parchment paper with non-stick spray and use that parchment paper to press the cereal down into the baking dish.
- Top the Rice Krispie treats with additional marshmallows from the Lucky Charms cereal.
