Ingredients

Ingredients for Brownie bottom cheesecake - brownie mix, cream cheese, eggs, vanilla, hot fudge.
  • Brownie Mix. Plus, ingredients to prepare the brownies based on the package instructions. 
  • Cream Cheese. Softened at room temperature.
  • Large Eggs. Room temperature eggs.
  • Vanilla Extract. Pure vanilla extract is recommended.  
  • Hot Fudge Sauce. Store bought or Hot Fudge Sauce Recipe.

Variations

  • Brownie Mix. Try different types of boxed brownie mix. We just used a plain mix but the ones with chocolate pieces or caramel would be delicious.
  • Sour Cream topping. For a new flavor twist, combine ½ cup sour cream and 2 teaspoons powdered sugar. Spread over the top of the cheesecake once cool.
  • Chocolate. Toss in semi sweet mini chocolate chips into the brownie batter for even more chocolate flavor. You can also add this to the cheesecake mixture for a chocolate chip cheesecake.
  • Homemade brownies. We used a boxes mix to keep it quick and simple. However, feel free to use homemade brownies.
  • Turtle Cheesecake. Top the cheesecake once cooled with hot fudge, caramel and pecans.
  • Nuts. You can 12 cup walnuts or pecans to the brownie batter.
  • Peanut Butter Cups. Chop leftover candy and garnish the top of the cheesecake. The chocolate and peanut butter combination is delicious.

How to Make Brownie Bottom Cheesecake

  • Step 1 – Preheat the oven. Preheat the oven to 350 degrees F.
  • Step 2 – Prepare the pan. Grease a 9-inch springform pan with non-stick cooking spray.

Step 3. Make the brownie mix according to the package instructions.  Pour into the bottom of the springform pan. Then bake for 15 minutes until the top of the brownies are set.

Step 4. Beat the cream cheese with an electric mixer and combine the eggs, sugar and vanilla extract until smooth and creamy.

Step 5. Remove the brownie pan from the oven.

Step 6. Pour the cream cheese mixture evenly over the baked bottom layer of brownie.

Step 7. Reduce the oven temperature to 325 degrees F.  Then bake for 40-45 minutes until the cheesecake batter is set but still jiggly.

Step 8. Let the cheesecake cool completely at room temperature.  Then chill in the refrigerator for at least 4-6 hours but overnight is preferred. When you are ready to serve, run a knife around the edge of the cheesecake.  Then carefully remove the sides of the springform pan.

Storage

Refrigerate the leftovers covered for up to 1 week. Make sure to cover the entire cheesecake in plastic wrap so it stays fresh. You can also store inside an airtight container or freezer bag.

Can You Freeze Cheesecake?

Yes, this cheesecake can be frozen up to 6 weeks. Wrap in plastic wrap and then foil before freezing.

I like to write the name and date on the outside so it’s easy to keep up with how long it’s been in the freezer.

Allow the cheesecake to thaw before serving.

Expert Tips

  • Room temperature ingredients. Make sure to use room temperature ingredients to ensure that the cheesecake layer is smooth and creamy. 
  • Allow to cool. It is important to allow the cheesecake to cool completely before removing from the pan.
  • 9″ Pan. If you do not have a springform pan, you can use a 9″ round pan. Make sure to grease the pan with non stick cooking spray before using.
  • Eggs. Stir the eggs into the mixture instead of beating them first. You do not want the extra air in the batter. This will make the cheesecake batter have too much air and rise and crack while baking.
  • Serving ideas. It is delicious with a scoop of vanilla ice cream or whipped cream. Then drizzle with more hot fudge. This is so rich and creamy.
