Ingredients

Ingredients for Red velvet cheesecake brownies - cocoa powder, food coloring, cream cheese, eggs, milk.

Brownies

  • Unsweetened Cocoa Powder: Be sure to use unsweetened cocoa powder to get the true chocolate flavor without extra sugar.
  • Red Food Coloring: Adds a vibrant red hue to your brownies. Optional—the brownies will still taste amazing without using liquid food coloring.

Cheesecake Layer

  • Cream Cheese: Let it soften at room temperature before mixing to ensure a smooth, creamy cheesecake layer.

Step By Step Instructions

  • Step 1. Preheat the oven. Set the oven temperature to 350 degrees F. Then line an 8X8 baking pan with parchment paper.
Bowl of sugar, vanilla and cocoa powder.

Step 2. Get out a large bowl. Whisk together the eggs and melted butter in a medium bowl. Add the sugar, vanilla extract, salt and cocoa powder.

Wet and dry ingredients added in bowl.

Step 3. Add the red gel food coloring and flour. Continue to add until the batter is a deep red color.  Slowly add in the flour until just combined with an electric mixer.  Do not over mix the remaining brownie batter. Spread into baking dish.

Cheesecake mixture combined in bowl.

Step 4. Combine the cheesecake ingredients in a small bowl. Just add all of the cheesecake layer ingredients to a large mixing bowl including egg and vanilla. Beat together until the mixture is smooth and creamy. Scrape the sides with a rubber spatula.

Batter swirled in baking dish.

Step 5. Drop the cream cheese mixture on top of the red velvet batter. I would do this in large spoonfuls. Use a knife to swirl the cream cheese layer into the brownie batter to create a swirl pattern.

Step 6. The brownies should bake for 30 to 35 minutes or until they are set. A toothpick inserted into the brownies should come out clean.

Step 7. Allow to cool. Then cut and enjoy.

Storage

Room Temperature: Store in an airtight container for up to 2 days.

Refrigerator: Keep in an airtight container for up to 5–7 days in the fridge. Bring to room temperature before serving for the best texture.

Freezer: Wrap tightly in plastic wrap and place in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before slicing.

Pro Tips

  • Use room-temperature cream cheese for a smooth, lump-free cheesecake swirl.
  • Don’t overmix the brownie batter—this keeps the brownies fudgy.
  • Swirl, don’t mix completely—for a beautiful red and white marbled effect.
  • Cool completely before cutting to get clean slices.
  • Optional add-ins: white chocolate chips, chocolate chunks, or nuts for extra texture.
  • Adjust sweetness: If you like it sweeter, sprinkle a little powdered sugar on top before serving.
