This is probably one of my favorite combinations. There is a layer of red velvet brownie topped with cheesecake. The brownies are fudgy and so delicious.

I absolutely love red velvet cake and adding cheesecake takes it up a level. The brownie layer is super easy to make. The cheesecake layer is so luscious.

The cheesecake batter is gorgeous swirled into the brownies and so yummy. Each bite is really moist and yummy with tons of flavor.

The vibrant red color is stunning. We love these year round but they definitely would be pretty for Valentine’s Day or Christmas.

Ingredients

Ingredients for Red velvet cheesecake brownies - cocoa powder, food coloring, cream cheese, eggs, milk.

For the Red Velvet Brownies

  • Unsweetened Cocoa Powder. Make sure that you purchase unsweetened.
  • Red Food Coloring. The liquid food coloring enhances the color but is optional.

For the Cheesecake Layer

  • Cream Cheese. Allow this to soften at room temperature for the smoothest filling.

How to make red velvet cheesecake brownies

  • Step 1. Preheat the oven. Set the oven temperature to 350 degrees F. Then line an 8X8 baking pan with parchment paper.

Step 2. Get out a large bowl. Whisk together the eggs and melted butter in a medium bowl. Add the sugar, vanilla extract, salt and cocoa powder.

Step 3. Add the red gel food coloring and flour. Continue to add until the batter is a deep red color.  Slowly add in the flour until just combined with an electric mixer.  Do not over mix the remaining brownie batter. Spread into baking dish.

Step 4. Combine the cheesecake ingredients in a small bowl. Just add all of the cheesecake layer ingredients to a large mixing bowl including egg and vanilla. Beat together until the mixture is smooth and creamy. Scrape the sides with a rubber spatula.

Step 5. Drop the cream cheese mixture on top of the red velvet batter. I would do this in large spoonfuls. Use a knife to swirl the cream cheese layer into the brownie batter to create a swirl pattern.

Step 6. The brownies should bake for 30 to 35 minutes or until they are set. A toothpick inserted into the brownies should come out clean.

Step 7. Allow to cool. Then cut and enjoy.

Storage

Place the brownies inside a container with an airtight lid. They will keep at room temperature up to 3 days.

You can refrigerate them up to 6 days. Placing them in the fridge will extend their storage life.

Can you freeze?

Yes, you can freeze Red Velvet Brownies. Place inside an airtight container or freezer bag.

I like to separate the layers with parchment paper. They can be frozen up to 2 months.

This is perfect for leftovers so they are not wasted. You might also want to make them ahead for parties or special occasions.

How to cut brownies?

  • Allow the brownies to cool completely. You can also chill them for 30 minutes to make it even easier to cut.
  • Use a plastic knife to cut the brownies. If you do not have a plastic knife, use a regular one and spray it with non-stick cooking spray.
  • Wipe off after each cut to remove any excess brownie on the knife.

Expert Tips

  • Use full-fat brick-style cream cheese. Using whipped or reduced-fat will alter the texture and taste. We do not recommend it.
  • Don’t overmix the brownie batter. Stir until just combined. Overmixing the brownies will result in dry and dense brownies instead of soft and fudge-like.
  • Do not overbake the brownies. The center should be set but slightly gooey. If they are really dry when you take them out, you have cooked them too long.
  • Use a knife to swirl the cheesecake batter into the brownie layer. This will create a gorgeous layer on top. Don’t stir the batter or you will lose that pretty cheesecake swirl look.

Instructions

  • Preheat the oven to 350 degrees F. and line an 8X8 baking pan with parchment paper.
  • For the Red Velvet Brownies:
  • In a large bowl, beat together the eggs and melted butter.  Then beat in the sugar, vanilla extract, salt and cocoa powder.  Add in the red food coloring until the batter is a deep red color.  Then slowly add in the flour until just combined.  Be careful not to over mix.  Pour the batter into the 8X8 baking pan in a single layer.
  • For the Cheesecake Layer:
  • Add all the cheesecake layer ingredients to a bowl and beat together until the mixture is smooth and creamy.
  • Then drop the cream cheese mixture on top of the red velvet batter in large dollops.  Then use a knife to swirl the cream cheese layer into the brownie batter to create a swirl pattern.
  • Bake for 30-35 minutes until the brownies are set and a toothpick inserted into the brownies comes out clean.
  • Allow the brownies to cool completely and then cut them into pieces and enjoy!
