How to Make Valentines Rocky Road:
- Step 1 – First, line 13×9 pan with parchment or wax paper.
- Step 2 – Next, melt chocolate chips, butter and condensed milk in a medium to large pan over medium/low heat. Stir constantly to keep it from scorching.
- Step 3 – Once melted, remove chocolate mixture from heat and allow to cool slightly. Stir peanuts, chocolate and marshmallows together.
- Step 4 – Spread rocky road mixture into prepared pan and add Valentine’s sprinkles and/or candy decorations as desired.
- Step 5 – Chill until set, approximately 2 – 3 hours. Cut into squares and serve.
- Step 6 – Make sure to allow enough time to chill before trying to cut this into squares. Trying to cut it too soon can be difficult as it will be sticky at first.
Recipe Tips for Valentines Rocky Road:
- Use the type of nut you prefer – Chopped pecans or walnuts can be substituted for peanuts for preference or those with allergies.
- Mix in Sprinkles – Valentine’s sprinkles and decorations are optional but so fun.
- Use Salted Nuts – Salted nuts taste better than unsalted nuts in this recipe.
- Melting Chocolate – Slowly melt the chocolate on low heat so that it does not burn.
- Baking Sheet – Line baking pan with parchment paper or wax paper for easy cleanup.
- Spoon – It is helpful if you spray the spoon with non-sticking spray to prevent the mixture from sticking.
- Change the Chocolate – Feel free to use dark chocolate chips or milk chocolate chips in this recipe.
- Sea Salt – If you have it, top the rocky road fudge with sea salt.
How to Store Leftovers:
Leftovers should be refrigerated and will last at least 1 week. We gobble this up so ours usually goes pretty fast around here.
The entire family loves rocky road candy. It is so easy to make and really decadent.
Can you Freeze Rocky Road Candy?
The Rocky Road fudge can be frozen up to a month if stored properly. Just place inside an airtight freezer container. I also like to put wax paper in between the fudge slices. Make sure rocky road candy is a room temperature before storing.
This helps to prevent sticking. If you do a lot of baking for the holidays, this is something you can definitely make ahead of time.
