Homemade Rocky Road Candy is a no bake fudge that is made with only a few ingredients. You can easily make it for holidays or just because. No baking is required to make this delicious fudge.

The chocolate chips are melted and combined with peanuts, marshmallows and other simple ingredients. It is a sweet and salty treat that is perfect combined with red and pink sprinkles.

This candy is perfect for the holiday season or year round. You can make it for Easter, Christmas, birthdays and more.

How to Make Rocky Road Candy

  • Step 1. Line 13ร—9 pan with parchment or wax paper.
Sauce pan with chocolate, butter and milk melting together.

Step 2. Melt the chocolate chips, butter, and condensed milk in a pan using medium/low heat. Make sure to stir constantly to prevent it from scorching.

Mixture combined in pan and peanuts added.

Step 3. Once melted, remove from heat and allow to cool slightly. Then add in the peanuts and marshmallows. Stir until smooth.

Mixture spread into pan.

Step 4. Spread the rocky road mixture into the lined baking sheet. Then refrigerate for 2 to 3 hours to allow to set.

Mixture cut into bars.

Step 5. Cut into squares and serve.

Recipe Tips

  • Use the type of nut you prefer – Chopped pecans or walnuts can be substituted for peanuts for preference or those with allergies.
  • Use Salted Nuts – Salted nuts taste better than unsalted nuts in this recipe.
  • Melting Chocolate – Slowly melt the chocolate on low heat so that it does not burn.
  • Baking Sheet – Line baking pan with parchment paper or wax paper for easy cleanup.
  • Spoon – It is helpful if you spray the spoon with non-sticking spray to prevent the mixture from sticking.
  • Change the Chocolate – Feel free to use dark chocolate chips or milk chocolate chips in this recipe.
  • Sea Salt – If you have it, top the rocky road fudge with sea salt.

Storage

Leftovers should be refrigerated and will last at least 1 week. We gobble this up so ours usually goes pretty fast around here.

How to Freeze

The Rocky Road fudge can be frozen for up to a month if stored properly. Just place it inside an airtight freezer container. I also like to put wax paper in between the fudge slices. Make sure Rocky Road candy is a room temperature before storing.

This helps to prevent sticking. If you do a lot of baking for the holidays, this is something you can make ahead of time.
