  • Cream Cheese. It needs to be softened at room temperature.
  • Vanilla Extract. Pure vanilla extract is suggested.

How to Make Chocolate Chip Cheesecake Bars

  • Step 1 – Preheat the oven to 350 degrees F and line an 8X8 baking pan with parchment paper or foil.

Step 2. Take half of the cookie dough and press it into the bottom of the pan to form the chocolate chip cookie crust.

Step 3. Then beat together the ingredients for the cheesecake layer.

Step 4. Spread the cheesecake layer mixture on the crust in the 8X8 baking pan.

Step 5. Then crumble the remaining cookie dough crumbs over the top of the cheesecake filling.

Step 6. Bake uncovered for 30 minutes to 40 minutes until set.

Place the chocolate chip cheesecake bars in the airtight container. If you leave the cheesecake bars in the baking dish, make sure to cover with plastic wrap. These cheesecake bars will last about 5 days.

  • Baking Dish – I usually make the chocolate chip cookie cheesecake bars in a 8×8 pan. But if I am bringing it to a party, I will double the recipe. Then I will use a 9 x 13 pan.

Ingredients

  • 18 oz. Refrigerated Chocolate Chip Cookie Dough
  • 8 oz Cream Cheese softened at room temperature
  • 1/2 cup Granulated Sugar
  • 1 Egg
  • 1/2 tsp Vanilla Extract

Instructions

  • Preheat the oven to 350 degrees F and line a 8X8 baking pan with parchment paper or foil.
  • Take half of the cookie dough and press it into the bottom of the pan to create the crust of the cheesecake bars.
  • Then cream together on high speed with a hand held mixer or stand up the mixer, the cream cheese and sugar until the mixture is light and fluffy.
  • Reduce the speed to medium and add in the egg and the vanilla extract.  Mix until well combined and the mixture is smooth.
  • Spread the cream cheese mixture onto of the crust in the 8X8 baking pan.
  • Crumble the remaining cookie dough over the top of the cream cheese layer.
  • Bake uncovered for 35-40 minutes until set and slightly firm.
  • Allow the mixture to cool completely at room temperature and then chill in the refrigerator before cutting and serving.  Chill the bars for a minimum of 4 hours but overnight is ideal so that they can fully set.
