How to Make Raspberry Cheesecake Brownies
Step 1 – Prepare oven and Brownie Mix – Preheat the oven to 350 F. Prepare box brownie mix based on the package instructions with stand mixer. Pour the batter into a 9X13 baking pan.
Step 2 – Make Cheesecake Filling – For the cheesecake filling, beat Cream Cheese with a hand held mixer until creamy in a bowl. Stir 1 cup of granulated sugar, egg and vanilla. Mix well until well combined.
Step 3 – Prepare the Raspberry Swirl. – Make the raspberry swirl, place the ½ cup of raspberries and sugar into a food processor. Blend until smooth. Then strain through a fine mesh strainer to remove all of the seeds.
Step 4 – Drop creamy cheesecake layer and raspberry onto brownie – Drop the cheesecake batter by tablespoonfuls over brownie batter. Then use a spoon to drop small drops of the raspberry puree on top of the cheesecake mixture.
Step 5 – Swirl mixtures together – Use a knife to swirl both of the batters into the fudgy brownie batter.
Step 6 – Bake Brownie – Bake for 35 to 40 minutes. Bake until cream cheese mixture is slightly browned and the brownies are cooked through. Cool completely before cutting and enjoy.
Recipe Tips
- Brownie Mix – Prepare brownie mix as the box indicates. Do not over mix the ingredients. Mix until combined.
- Raspberry Puree – Use a fine mesh strainer to remove any seeds from the raspberries.
- Dropping batter – Gently drop the cream cheese mixture and raspberry puree on the brownie mix.
- Swirling together – Slightly swirl the three mixtures together. You want to see the swirling in the brownies after they have baked.
- Cool Completely – Before cutting the bars, make sure they have cool completely.
How to Store
Cover the leftover bars tightly and refrigerate for up to 4-5 days.
Can you Freeze Brownies?
Yes, just make sure to use a good freezer container. I also would place a layer of wax paper between the brownies. This will help the brownies from sticking to each other.
They can be frozen up to 6 months. This is so handy if you need to make them for an event or holiday. Just make sure to let them thaw at room temperature a few hours before you are ready to serve.
The brownies will still taste delicious and you will have more time to do other things. We often make these in advance for holidays, events and more.
How to Easily Cut Brownies
- Cool completely – First, make sure the brownies have completely cooled. Cutting brownies that are still warm will result in a mess. It is important to give them proper time to cool.
- Use Plastic Knife – The best way to cut brownies is with a plastic knife. They are non stick and help to ensure clean cuts.
- Clean Knife while cutting – As you see brownie start to build up on the knife, wipe with a napkin. Keeping your knife clean will help to cut the brownies better.
- Wipe Knife – I actually just wipe the knife after each cut. Each square will look nice and clean.
- Hot Water – Another tip is to run the knife under hot water. Just make sure to wipe it off so that it is completely cool before cutting.
- Regular Knife Tip – If you do not want to use a plastic knife, you can use a regular knife. However, I suggest spraying it with cooking spray.
