What is the secret to making creamy fudge?

It is very simple to make creamy fudge in the microwave. The trick is heating the mixture in 20 second intervals and stirring.

This will prevent the mixture from getting too hard or burning. Resist the urge to melt everything at once. Simply melt in intervals and you will have smooth and creamy fudge every time.

When cooking fudge on the stove top, it is important to cook the mixture to the right temperature and then remove from heat to allow the mixture to cool. This will result in a creamy texture.

Why we love this recipe:

  • Only 4 ingredients. It does not get any easier!
  • No candy thermometer. You don’t need any fancy cooking gadgets.
  • Microwaveable. This fudge is made in the microwave.
  • It tastes amazing. The texture is so creamy and it tastes rich and decadent.

This easy butterscotch fudge freezes really well. I often make this ahead of time for holidays and special occasions. Then allow the fudge to come to room temperature before serving.

Variations:

  • White chocolate chips. Substitute these for butterscotch. Another idea is to use half and half for a slightly different flavor.
  • Sprinkles. If you are making these for a birthday or holiday, add sprinkles to the top for a festive look.
  • Nuts. Either sprinkle chopped nuts into the fudge mixture or on top before it sets. We like pecans or walnuts but peanuts would probably be good too.
  • Sea Salt. Sprinkle sea salt on top of the fudge before it sets.

Tips and tricks:

  • Cook the fudge in intervals to prevent burning.
  • Stir the fudge mixture after each interval.
  • Don’t leave it out on the counter. It will harden.
  • Cut into small squares. A little goes a long way with this rich fudge recipe.
  • Use good quality butterscotch chips. Since the fudge has minimum ingredients, you want to make sure that you use high quality ones for best flavor.
  • Don’t forget to prepare the baking dish. Lining it with foil will make it so easy to life out and cut. You don’t want to skip this step.
  • Don’t substitute anything for the sweetened condensed milk. This is what creates the fudge texture with the butterscotch chips.
