What is The Secret to Making Creamy Fudge?

It is very simple to make creamy fudge in the microwave. The trick is heating the mixture in 20 second intervals and stirring.

This will prevent the mixture from getting too hard or burning. Resist the urge to melt everything at once. Simply melt in intervals and you will have smooth and creamy fudge every time.

When cooking fudge on the stove top, it is important to cook the mixture to the right temperature and then remove from heat to allow the mixture to cool. This will result in a creamy texture.

  • Butterscotch Chips. Use high quality butterscotch chips for the best results.
  • Sweetened Condensed Milk. The fudge gets its sweetness and creaminess from this ingredient.
  • Vanilla Extract. Pure vanilla extract is best in this recipe.

Variations

  • White chocolate chips. Substitute these for butterscotch. Another idea is to use half and half for a slightly different flavor.
  • Sprinkles. If you are making these for a birthday or holiday, add sprinkles to the top for a festive look.
  • Nuts. Either sprinkle chopped nuts into the fudge mixture or on top before it sets. We like pecans or walnuts but peanuts would probably be good too.
  • Sea Salt. Sprinkle sea salt on top of the fudge before it sets.

How to Make Butterscotch Fudge

  • Step 1 – Prepare the pan. Line either a 9X9 or an 8 X 8-inch pan with foil or parchment paper. If you use a square baking pan, it will be thicker than if you use the rectangle 9×9. Then spray it with a non-stick cooking spray.

Step 2. Place the butterscotch chips and sweetened condensed milk in a microwave safe bowl.  Then melt the butterscotch chips in 20 second intervals. You will need to stir after each interval.

Step 3. Then stir in the vanilla extract and salt.

Step 4. Spread the mixture into the baking dish. Cover the pan and chill for 2-3 hours. This will allow the fudge time to firm.

  • Use good quality butterscotch chips. Since the fudge has minimum ingredients, you want to make sure that you use high quality ones for best flavor.

Instructions

  • Line either a 9X9 or an 8X8 pan with foil or parchment paper and then spray it with a non-stick cooking spray.
