These Cake Mix Brownies are the perfect easy dessert when you’re craving something rich and chocolatey without spending a lot of time in the kitchen. Made with a box of chocolate cake mix, a few simple ingredients, and plenty of chocolate chips, these brownies bake up soft, fudgy, and delicious. They’re quick enough for a last-minute treat and easy enough to make any day of the week.

Ingredients

Ingredients for recipe: cake mix, eggs, vanilla and semi-sweet chocolate chips.
  • Chocolate Cake Mix. You can use any brand you prefer.
  • Eggs. I used large eggs.
  • Vanilla Extract. Pure vanilla extract is best.
  • Semi-Sweet Chocolate Chips. Use good quality chocolate for the best flavor.

Additions and Variations

  • White chocolate Chips. Substitute white chocolate chips for chocolate chips in this recipe. Another idea is to do ½ cup of each.
  • Peanut Butter Morsels. If you love peanut butter and chocolate, add peanut butter chips to the mixture instead of the chocolate chips.
  • Cake Mix. It really does not matter what brand you use. Feel free to use your favorite brand. We have used Duncan Hines and store brand with good results.
  • Flavors. Instead of chocolate, use other flavors. Red Velvet Cake mix is delicious to make red velvet brownies. Strawberry and lemon also taste great.

    Yellow cake mix would result in wonderful blondie style brownies. If you want to stick with chocolate but love dark chocolate, use a dark chocolate mix.
  • Add ins. You can add 1 cup of chopped nuts to the mixture if you prefer. Chopped walnuts or pecans make great options. Other ideas include peanuts and macadamia nuts.
  • Frosting. You can top the brownies with chocolate frosting for even more chocolate flavor.
  • Candy. Mix in M&M’s, crushed heath bar or toffee bits, Reese’s Pieces or any candy you like.

How To Make Cake Mix Brownies

  • Step 1. Preheat the oven and prepare the pan. Preheat the oven to 350 degrees F and line an 8X8 baking pan with parchment paper. Then spray it with cooking spray.

Step 2. Combine the cake mix and other ingredients together in a large bowl. Then fold in the chocolate chips gently with a rubber spatula.

Step 3. Pour the brownie batter into the pan. Bake for 18-22 minutes until the edges are slightly browned.  Don’t over bake the brownies! Allow to cool and then slice.

Storage

Store the leftover brownies in an airtight container at room temperature for up to 5 to 7 days.  

Can You Freeze Brownies?

Brownies can be frozen up to 3 months. Make sure to wrap them really good in plastic wrap to avoid freezer burn. The entire pan can be frozen or individually wrapped.

Either way, they just need to be wrapped really well and you can even put them in a plastic bag after wrapping them in plastic wrap. This will ensure freshness.

The brownies should be completely cool before freezing. When ready to enjoy, thaw at room temperature. If you like your brownies warm, they can be reheated in the microwave.

Pro Tips

  • Prepare the baking dish. The mixture is very thick. Make sure the pan has been lined with parchment paper and sprayed with cooking spray.
  • Don’t overbake the brownies. They will become tough if overcooked. They should be set around the edges.
  • Good Quality Chocolate Chips. Try to purchase a good brand of chocolate. It will make a big difference in the brownie mix.
  • Spread the batter. It is really thick so it might be hard to spread. Try spraying a rubber spatula with cooking spray to spread it. This should make it simple and easy.
  • Baking dish. Make sure that you use an 8×8 baking dish. This recipe is too thin using a 9×13 and the brownies turn out perfectly with an 8×8 pan.

  • 1 box Chocolate Cake Mix 15 oz
  • 1/3 cup Vegetable Oil
  • 2 Large Eggs
  • 2 teaspoons Vanilla Extract
  • 1 cup Semi Sweet Chocolate Chips

Instructions

  • Preheat the oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal. Lightly spray the parchment and sides of the pan with nonstick cooking spray.
  • In a large mixing bowl, combine the 15.25-ounce box of chocolate cake mix, ⅓ cup vegetable oil, 2 large eggs, and 2 teaspoons vanilla extract. Stir until a thick, evenly combined batter forms.
  • Fold in the 1 cup semi-sweet chocolate chips until evenly distributed throughout the batter.
  • Spread the batter evenly into the prepared 8×8-inch pan. Use a spatula or lightly greased hands to press the thick batter into an even layer.
  • Bake for 18–22 minutes, or until the edges are lightly browned and the center is set. Be careful not to overbake, as the brownies will continue to firm up as they cool.
  • Remove the pan from the oven and let the brownies cool completely in the pan.
  • Once cooled, use the parchment paper to lift the brownies from the pan. Cut into 12 pieces and serve.
