I love sweets and I love simple and easy candy recipes. This Graham Cracker Toffee meets those requirements and is one of my favorite desserts. You will be pleasantly surprised how amazing just 5 simple ingredients can be. 

This is the perfect dessert to enjoy for holidays, movie night and anytime you need an easy but amazing treat. This homemade candy bar treat is so addicting that will need to double the recipe.

What is Graham Cracker Toffee?

This graham cracker toffee is loaded with caramel and chocolate flavor. The ingredients are simple and the process to make this treat is so easy.

The graham crackers are topped with a boiling hot mixture of brown sugar and butter. This creates the delicious toffee layer. After baking, everything is coated with milk chocolate chips and nuts. It gets all ooey gooey and then you spread it over the toffee.

Once it hardens, you break it apart in pieces for a great recipe. It is absolutely one of my favorite candy recipes and only takes about 15 minutes. The recipe is truly effortless but turns out so delicious.

Ingredients for Graham Cracker Toffee:

Ingredients needed - graham cracker sheets, butter, brown sugar, chocolate chips, pecans
  • Graham Cracker Sheets
  • Butter
  • Packed Brown Sugar
  • Package Semi-Sweet Chocolate Chips
  • Chopped Pecans

Variations and Addition Ideas:

  • Different Nuts – We used pecans in this recipe, but you can also use sliced almonds or walnuts.
  • Sprinkles – For a fun and festive treat, top with sprinkles for the holiday your celebrating. This makes a great Christmas Crack Recipe.
  • Chocolate. Try using white chocolate or dark chocolate. Another tasty idea is to top with chocolate and then drizzle white chocolate on top.
  • Change the Crackers – Instead of graham crackers, try saltine crackers or you can use Ritz crackers. Yum!  Either of these would be great options for this toffee recipe.

How to Make Graham Cracker Toffee:

  • Step 1. Prepare Oven and Pan – First, preheat oven to 350 degrees.  Next, line a jelly roll pan with foil. Spray with a non-stick cooking spray.

Step 1. Line the pan with graham crackers. Set the pan aside.

Step 2. Melt the brown sugar and butter in a medium saucepan. Bring to a boil and continue boiling for 3 minutes. Make sure to stir constantly.

Step 3. Pour the mixture evenly over the graham crackers. Cover all of the crackers completely. Put the pan back in the oven for another 4 to 5 minutes.

Step 4. Sprinkle Chocolate Chips on the toffee mixture as soon as you remove from the oven.

Step 5. Melt the chocolate and spread all over the crackers. I used a spatula to evenly spread the chocolate.

Step 6. Sprinkle with chopped pecans. Then refrigerate to allow the toffee to harden. You do not have to add nuts if you don’t care for them.

Toffee Graham Cracker Tips:

  • Pecans – The pecans are optional so feel free to omit them all together. We are divided and some in our family love them and some do not. You can even top half of the toffee.
  • Use Jelly Roll Pan – Make sure you have a jelly roll baking sheet for this recipe. This is really important. 
  • Cookie Sheet – You can use a large baking sheet as long as it has sides.  You don’t want the sides pouring off the edges of the cookie sheet.
  • The crackers should touch – Make sure to arrange the cracker as closely as possible to each other. This will prevent the toffee from seeping through making it hard to crack.
  • Boil the butter and brown sugar – If it is not cooked long enough, the toffee will be soft and not harden.
  • Line the pain with foil –  It is so important to line the baking sheet with aluminum foil. This makes clean up easy. You can also use parchment paper or a baking mat. Clean up is much easier if you do this.

FAQs

Can you use other toppings?

If you want to try something besides nuts or maybe in addition to, the ideas are endless for toppings. You can use your favorite chopped up candy as well. 

M&Ms, Heath Bar or Butterfinger would all be delicious on this toffee.
Also I have melted white chocolate before and drizzled it over the top.
The combination of white chocolate and milk chocolate taste amazing and decadent. Peanut Butter would also be a good topping.

How to store?

Store the leftover toffee in a ziplock bag in the refrigerator for up to 2 weeks.  Place parchment paper in between the single layers so they don’t stick to each other.

You can also store in an air tight container.
If graham cracker toffee is at room temperature, the chocolate will melt.

Ingredients

  • 14 sheets graham crackers
  • 1 cup butter
  • 1 cup packed Brown Sugar
  • 11.5 oz package Semi-Sweet Chocolate Chips
  • 1 cup chopped pecans

Instructions

  • Preheat oven to 350 F.
  • Line a jelly roll pan with foil. Spray with a non-stick cooking spray.
  • Fill the bottom of the cookie sheet with graham crackers. Set the pan aside.
  • In a sauce pan melt the butter over low-medium heat. Add brown sugar once butter is completely melted and stir to combine. Bring to a boil and continue boiling for 3 minutes.
  • Immediately remove from heat and pour bubbly mixture over crackers covering the crackers completely.
  • Place pan in the oven for 4-5 minutes, or just until edges of brown sugar mixture gets bubbly.
  • Remove pan from oven and immediately and sprinkle the chocolate chips on top of the crackers.
  • Allow the crackers to sit for 5 minutes to melt the chocolate. Then use a spatula to spread the melted chocolate over the cracker layer evenly.
  • Sprinkle the pecans over the melted chocolate (optional).
  • Place the pan in the refrigerator to allow the toffee to harden.
  • Then remove the toffee from the pan and break it apart. Enjoy!
