I started making Soda Cracker Toffee about 10 years ago and it’s my favorite easy candy recipe. You only need a handful of ingredients and it’s really fast and easy to make. If you love sweet and salty desserts, this is the best recipe to try.

Why We Love This

Everyone looks forward to this every Christmas, but I also make it during the year. It’s inexpensive to make and so indulgent. It’s fun to break it into pieces and perfect for gifting.

With only 5 ingredients, you won’t find any easier recipe. If you omit the nuts, it’s just 4 ingredients! Either way, it’s so simple and no candy thermometers needed.

Ingredients

  • Saltine Crackers. Don’t use unsalted. You want the delicious saltiness of the crackers in this recipe.
  • Butter. I have used butter and margarine in this recipe and it’s much better with real butter.
  • Brown Sugar. No worries if you run out. Make Homemade Brown Sugar Recipe.
  • Semi-Sweet Chocolate Chips. I like to use semi-sweet because it cuts down on the sweetness.
  • Chopped pecans. This is optional but we love the nuts. You can also just sprinkle nuts on half the toffee if you have some that don’t care for them.

Variations

  • Chocolate. Swap the semi-sweet for milk chocolate chips or dark chocolate chips.
  • Graham Crackers. You can use graham crackers instead of crackers and make Graham Cracker Toffee.
  • Ritz Crackers. Another tasty option is Ritz Cracker Toffee Recipe with ritz crackers on the bottom.
  • Nuts. Walnuts and peanuts make great options if you don’t want to use pecans. You can also skip the nuts all together if desired.
  • Candy. Sprinkle crushed peppermint on the Christmas crack before the chocolate sets.

Step By Step Instructions

  • Step 1. Go ahead and preheat the oven to 350 degrees.

Step 2. Prepare the baking sheet with aluminum foil. Spray it with cooking spray. This is very important! Then line the bottom of the pan with the crackers.

Step 3. Get out a saucepan and melt the butter. Use low-medium heat. Then add the brown sugar once the butter is completely melted and stir. This mixture needs to boil for 3 minutes.

Step 4. Pour the hot mixture over the crackers. Make sure to cover the crackers completely. Put the pan in the oven for 4-5 minutes. You want the edges of the brown sugar mixture to be bubbly.

Step 5. Then remove the pan from the oven. Right away top with chocolate chips.

Step 6. Let the crackers sit for 5 minutes to melt the chocolate. Then use an offset spatula to spread the melted chocolate over the crackers.

Step 7. Finally, sprinkle the nuts over the melted chocolate. The toffee needs to sit at room temperature for about 1-2 hours to set. If you are in a hurry, place the pan in the refrigerator to allow to harden. Then remove from the pan and break the Saltine Cracker Toffee into pieces.

Storage

Store any leftover saltine cracker candy in an airtight container at room temperature for up to 1 week or refrigerate up to 2 weeks.

Pro Tips

  • Rimmed Baking Sheet. You need to use a baking sheet with a rim. If not, the brown sugar mixture will spill over and make a mess.
  • Crackers in a single layer. Make sure to put the crackers in a single layer and don’t overlap them.
  • Unsalted Butter. Since you are using salted crackers, I would use unsalted butter. You don’t want to have too much salt.
  • Add the chocolate right away. As soon as you remove the pan from the oven, sprinkle the chocolate chips so the heat can melt them.
  • Don’t wait to add the nuts. As soon as you spread the chocolate, add the nuts so they set in the chocolate.
  • Boil for 3 minutes. Let the brown sugar and butter mixture boil for 3 minutes. It needs to boil for the entire 3 minutes.

Ingredients

  • 40 Saltine Crackers
  • 1 cup butter
  • 1 cup packed Brown Sugar
  • 11.5 oz package Semi-Sweet Chocolate Chips
  • 1 cup chopped pecans

Instructions

  • Preheat the oven to 350 F.
  • Line a jelly roll pan with foil. Spray with a non-stick cooking spray.
  • Fill the bottom of the pan with saltine crackers. Set the pan aside.
  • In a saucepan, melt the butter over low-medium heat. Add brown sugar once butter is completely melted and stir to combine. Bring to a boil and continue boiling for 3 minutes.
  • Immediately remove from heat and pour bubbly mixture over crackers covering the crackers completely.
  • Place the pan in the oven for 4-5 minutes, or just until the edges of brown sugar mixture gets bubbly.
  • Remove the pan from the oven and immediately sprinkle the chocolate chips on top of the crackers.
  • Allow the crackers to sit for 5 minutes to melt the chocolate. Then use a spatula to spread the melted chocolate over the cracker layer evenly.
  • Sprinkle the pecans over the melted chocolate.
  • Allow the toffee to sit at room temperature until set (1-2 hours) or place the pan in the refrigerator to allow the toffee to harden.
  • Remove the toffee from the pan and break it apart. Enjoy!
