Why Are Samoas Called Samoas?
The most popular theory claims the cookies were named after the island of Samoa. This island is known for coconut as it is one of the countries top exports.
Other theories suggest the name sounds like “some more” which is what cookie fans want. They want more of these Samoa Cookies.
While it closely sounds like s’mores, that name was already taken. Hence the name Samoas. We also have been making Fried Ice Cream for years.
Ingredients
- Heavy whipping cream. Make sure it is cold before using and not room temperature.
- Sweetened condensed milk. Don’t substitute for regular milk. This gives the ice cream its sweetness.
- Shredded coconut. I used unsweetened coconut.
- Chocolate syrup. You can also use Hot Fudge Sauce Recipe.
- Caramel syrup. Homemade Caramel Sauce Recipe is easy to make.

Variations
- Chocolate Chips. Mix in a handful of chocolate chips. Semi sweet or dark chocolate both taste great.
- Sea Salt. Sprinkle sea salt on top.
How to Make Samoa Ice cream
- Step 1. Whisk the cream in a bowl for 2-3 minutes. Pour the cream in a medium bowl until stiff peaks begin to form. You can use a standing mixer or hand mixer.
Step 2. Add the remaining ingredients. Gently fold in the sweetened condensed milk and shredded coconut. Be really gentle combining so that you do not remove any of the air. I like to use a rubber spatula.
Step 3. Place into a freezer container. Pour the mixture into a 9×5 inch loaf pan. Drizzle the chocolate syrup and caramel sauce generously on top. Use a knife to swirl the sauces into the ice cream base to create a swirl a fudge swirl appearance. Do not stir but lightly swirl.
Step 4. Generously drizzle extra syrup on top. Then Freeze for a minimum of five hours before serving to chill and set.
Step 5. Scoop and serve. It’s also great with Brown Sugar Syrup.
Storage
You can store this in the freezer for up to 2 months tightly covered with plastic wrap. I suggest placing a layer of parchment paper or pieces of plastic wrap directly on the ice cream to prevent ice crystals from forming.
Pro Tips
- For additional coconut flavor, add a tablespoon of coconut syrup or a teaspoon of coconut extract to the heavy cream prior to whipping. This creates a coconut base that is extremely decadent and flavorful.
- Because there is so much sweetness in the condensed milk and syrups, I prefer to use unsweetened coconut flakes in this easy and delicious recipe.
- Serve this treat in between two Girl Scout Samoa cookies to easily make ice cream sandwiches. This is really amazing for a fabulous treat without much work.
- Swirl the fudge sauce into the ice cream instead of stirring. This will create the gorgeous fudge stripe appearance in the creamy base.
- The toppings are delicious but can make the ice cream take longer to sufficiently harden. I prefer to leave this in the freezer overnight to ensure it is hardened. This will also make the base easy to scoop.
- Make sure the bowl has been chilled before whipping the cream. I normally place it in the freezer to ensure it is sufficiently cold. This helps the heavy cream to easily whip into stiff peaks. The colder the ingredients, the better the outcome.

Ingredients

- 14 oz can sweetened condensed milk
- ½ cup shredded coconut
- ¼ cup chocolate syrup
- ¼ cup caramel syrup
Instructions
- Whip the cream in a large mixing bowl until stiff peaks begin to form.
- Gently fold in the sweetened condensed milk and shredded coconut, being careful not to knock air out of the whipped cream.
- Pour the mixture into a 9×5 inch loaf pan and drizzle the chocolate syrup and caramel syrup on top. Use a knife to swirl the sauces into the ice cream base.
- Drizzle some extra syrup on top and allow the mixture to freeze for five hours before serving.
