Raspberry Cobbler Recipe:

We love a good clobber recipe. Add in fresh raspberries and this cobbler is one of our favorites. It is the perfect cobbler to take to a potluck or your next family reunion.

This sweet and tart cobbler is made with simple ingredients. From the crispy topping to the raspberry filling it is all made from scratch. Top this cobbler with some ice cream or whipped cream and it becomes a decadent dessert.

This easy and delightful dessert is perfect for all your summer gatherings. This creamy, juicy and bursting with raspberry flavor cobbler will be requested over and over by everyone.

Do Raspberries Make a Good Cobbler?

Yes, raspberries is one of my favorite fruit filled cobbler that we make. The crunchy biscuit topping is perfect layered over many different summer fruits. We love serving cobbler fresh out of the oven with some ice cream.

Cobblers are easy to make with minimal dishes to clean. The ingredients are mixed together in a bowl and then layered in a pan. Making raspberry cobbler gives you the sweet and tart flavor that makes you want more.

Ingredients needed - raspberries, lemon, sugar, cornstarch, butter, milk, salt, baking powder, flour, vanilla

Ingredients: 

For the Filling: 

  • Raspberries, frozen or fresh 
  • Lemon, juiced 
  • Granulated Sugar 
  • Cornstarch 

For the Topping: 

  • Butter, melted 
  • Milk 
  • Granulated Sugar 
  • Salt 
  • Baking Powder 
  • Flour 
  • Vanilla Extract 

The Sugar Topping: 

  • Butter, melted 
  • Sugar 

How to Make Raspberry Cobbler: 

  • Prepare oven and baking dish – Preheat the oven to 350 degrees. Then spray a 9X13 baking pan with non-stick cooking spray.  
  • Mix together Filling Ingredients – In a large mixing bowl, gently toss together the filling ingredients. 
  • Pour into prepared pan – Then spread this mixture evenly into the prepared baking pan.

  • Combine Topping Ingredients – In a separate bowl, mix together the topping ingredients. 
  • Layer over Raspberry Mixture – Pour this mixture over the raspberries in the baking pan.  Note: This mixture will be thick so just make it as even as possible. 
  • Top with Sugar Topping – Then add the sugar topping. Rub the top of the dough with the melted butter and sprinkle the sugar on top.

  • Bake Cobbler – Bake for 45-55 minutes or until the top of the cobbler is a golden brown color.  Also, a toothpick inserted into the dough portion of the cobbler should come out clean.  
  • Serve and Enjoy – Let the cobbler cool on a wire rack for 5 minutes. Then it’s ready to serve warm topped with ice cream or whipped cream.

How to Serve Cobbler:

  • Vanilla ice cream is our favorite. The cobber is delicious served warm and topped with cold ice cream. (We love this easy homemade vanilla ice cream recipe.) Butter pecan is yummy too.

Can you Freeze Cobbler?

Yes, you can freeze cobbler. This would be a great cobbler to make in advance. Prepare cobbler as indicated and then let the cobbler cool to room temperature. Once the cobbler has cooled, place a plastic wrap and foil over the top of the baking dish.

The cobber will last about 1 month in the freezer.

How to Store and Reheat Cobbler:

  • The cobbler can be stored in the fridge for 4-5 days. Make sure to store in an airtight container to keep the cobbler fresh.
  • We prefer cobbler served warm so just reheat in the oven for 20 minutes. Just remember to let the dish come to room temperature before placing in the oven.
  • If you just want a small portion, you can scoop up a bowl and pop in the microwave.

Cobbler Variations:

  • Use different types of fruit – Apple, blackberry, blueberry and strawberry all make amazing cobblers. Peach Cobbler is one of my favorites.
  • Any type of fruit will work – You can use fresh, frozen or canned fruit. Use what you have.
  • More Liquid – If you prefer your cobbler with more liquid, add more juice.
  • Adding in Nuts is a family favorite – Add nuts to the mix before baking for even more flavor.
