Pro Tips

  • Mixing the batter: Combine the ingredients until just mixed. Avoid overmixing to keep the cookies tender. You can use a stand mixer or mix by hand. Fold in the chopped strawberries gently with the flour mixture.
  • Prepare baking sheets: Line your baking sheets with parchment paper for easy cleanup and to help the cookies bake evenly without spreading too much.
  • Let cookies set: After baking, allow the cookies to rest on the baking sheet for about 5 minutes before transferring them to a cooling rack. This helps them firm up and reduces crumbling.
  • Baking time: Bake the cookies until they turn golden brown around the edges. They will continue to cook slightly while resting on the baking sheet.
  • Use a cookie scoop: For evenly sized cookies, use a cookie scoop to portion out the dough onto the baking sheet.
  • Prep strawberries in advance: Clean and chop strawberries into small pieces ahead of time. Larger chunks may affect how well the cookies bake.
  • Using frozen strawberries: Thawed frozen strawberries can be used as a substitute. Make sure to drain excess liquid thoroughly to avoid soggy dough and maintain the right texture.

Frequently Asked Questions

How to Store?

Store the leftover cookies in an airtight container for up to 5 days.  Keep a piece of bread in the container with the cookies to keep them soft.

How to Freeze Shortcake Cookies?

These Strawberry Shortcake Cookies freeze well and there are two options you can choose from. You can freeze the dough which is the method we prefer.

Get all the step by step instructions to freeze cookie dough.
After forming the dough balls, flash freeze on a baking sheet for 1 to 2 hours. Then freeze in bags or freezer containers until ready to bake.

This method makes it super easy to enjoy fresh baked cookies any day of the week. Just note that frozen cookies will need a few extra minutes to bake.

The other option is to freeze the cookies after they are baked. Place parchment paper in between the layers when freezing. You can use a freezer container or bag and freeze up to 3 months.

Why are my Strawberry Shortcake flats?

Make sure when combining the butter into the flour mixture, make sure to not overmix. You want the texture to crumbly and to easily press. Also make sure before adding in the strawberries that they have been dried.

Adding moisture to the shortcake mixture may cause the cookies to be flat.
