- Butter. Cut into small pieces.
- Vanilla Extract. Pure vanilla is best.

Step By Step Instructions

Step 1. After you preheat oven to 350 degrees, combine the strawberries, sugar and lemon juice in a small bowl to medium bowl. Then let the mixture sit for 10 minutes. Drain the excess moisture.

Step 2. Combine the dry ingredients in a large bowl. Whisk together the sugar, flour, baking powder, and salt.

Step 3. Then cut in the butter until a crumbly mixture is formed. You can use a pastry cutter, fork or your hands. Slowly stir in the vanilla extract and cream until a dough starts to form.

Step 4. Next, carefully mix in the strawberries with a wooden spoon. Be careful not to smash the strawberries.

Step 5. Scoop the dough into cookies and place on baking sheet.

Step 6. Gently press down the dough balls with the bottom of a glass. This will help them not to spread.

Step 7. Finally, bake the cookies for 18-20 minutes. The cookies should be slightly golden around the edges. Be careful not to over bake.

Step 8. Let the cookies rest for 5 minutes on the baking sheet. Then move them to a wire rack to cool completely.
