My kids love fudge pops so I thought I would try to make this homemade popsicle recipe. The chocolate is richer, and the flavor is much more intense than store bought. Chocolate fans definitely want to try this recipe and also Dairy Queen Buster Bar Recipe.

Ingredients for CHOCOLATE POPSICLES. - milk, cream, cocoa powder, water, floru.
  • Whole Milk. Whole Milk will result in the richest taste, but you can substitute reduced fat milk if you prefer.
  • Heavy Cream. This gives the popsicles such great flavor.
  • Unsweetened Cocoa Powder. Make sure to use unsweetened.

How To Make Chocolate Popsicles

Step 1. Combine all of the ingredients in a large saucepan with a whisk. Simmer and then allow the mixture to boil for 2 to 3 minutes.

Step 2. Next, remove from the heat so the mixture can cool slightly.  Divide the mixture between the popsicle molds and add the popsicle sticks. Freeze the popsicles 4 to 6 hours but I prefer overnight.

Storage

  • Freezer storage: Fudgsicles can be stored in the freezer for up to 3 months.
  • In molds: You can keep them in the molds until ready to eat.
  • Out of molds: If you remove the popsicles, place them in an airtight freezer-safe container or bag.
  • Prevent sticking: Separate popsicles with parchment paper to keep them from sticking together.
  • Serving tip: Let popsicles sit at room temperature for a few minutes before eating for easier removal from molds.

How To Remove Popsicles From Molds?

Run the popsicle mold under warm water. Only do this a few seconds or you risk melted the popsicle mixture.

This should help to make it easier to remove the popsicle from the mold.

Just don’t use hot water or it will quickly melt the popsicles and make a really big mess. Also, don’t put in the microwave.

  • Enjoy immediately: Popsicles melt quickly once removed from the freezer, so serve right away.
  • Boil the mixture: Bring the chocolate mixture to a gentle boil and let it cook for 2–3 minutes to fully incorporate the ingredients and develop flavor.

Instructions

  • Pour all the ingredients into a large sauce pan.
  • Whisk them together and heat over high heat. Bring the mixture to a boil.  Heat for 2-3 minutes.
  • Then remove from the heat to cool slightly.
  • Pour the mixture into popsicle molds, insert the popsicle stick and freeze until set (4-6 hours).

Recipe Notes

The cream makes these popsicles more creamy but you can use all milk instead if you prefer. 
The Popsicles can be stored in the freezer for up to 3 months.

    Thank you so much for this recipe. It’s my favorite chocolate popsicle recipe and I make it all the time. I use flat molds and I just sprinkle mini chocolate chips on top. Also my mom likes to add instant coffee with milk to this recipe as well and she loves it. 🌟

      I have not tried this recipe without the flour. It is acting as a thickener, helping the popsicle mixture become creamier and less icy once frozen. It’s not providing gluten structure like in baking, but it does make a smoother texture. If you omit the flour, the popsicles will still freeze, but they may turn out more icy and less creamy.
