Ingredients

Ingredients for Nutella No Bake Cookies - butter, cocoa powder, milk, vanilla, Nutella and quick oats.
  • Salted butter. I prefer salted butter in this recipe.
  • Unsweetened cocoa powder. Make sure you are using unsweetened.
  • Milk. Whole milk will give the cookies the richest taste, but I have used reduced fat in a pinch.
  • Vanilla extract. Pure vanilla is best.
  • Nutella. You can use your favorite brand of hazelnut spread.
  • Quick oats. Don’t use old fashioned oats.

Step By Step Instructions

  • Step 1. Start by preparing 2 baking sheets. Line them with parchment paper and then set aside.  
Saucepan with butter, sugar, cocoa and milk combined.

Step 2. Get out a saucepan. Combine butter, sugar, cocoa, and milk over medium heat. Continue to stir until it boils. Then let it boil for 60 seconds and don’t stir it.

Nutella added to mixture and combined in pan.

Step 3. Next, remove from heat. Add the vanilla and Nutella right away.  Stir until combined.

Step 4. Once combined, add the quick oats.

Cookie mixture combined until blended together.

Step 5. Stir until mixed together.

Step 6. Scoop the cookies and place on the baking sheets. I used a cookie scoop to easily do this.

Step 7. Let the cookies set. It will take about 20 – 30 minutes.  Then serve and enjoy!

Storage

Place the cookies inside an airtight container. They can be stored at room temperature up to 1 week or refrigerate them up to 2 weeks.

Pro tips

  • Line the baking sheet. Cleanup is much easier when you line the pans with parchment paper, aluminum foil or a silicone baking mat.
  • Milk. You can swap the milk for a nondairy milk if desired.
  • Don’t stir while boiling. Once the cookies boil, it’s important not to stir them during the last 60 seconds.
  • Immediately add the Nutella and oats. As soon as you remove from the stove add the Nutella and combined. Then add the quick oats. Don’t wait to add these ingredients.
  • Only use Quick Oats. Old fashioned oats have a different texture, and the cookies won’t taste the same.

Instructions

  • Line two baking sheets with parchment paper and set aside.
  • In a saucepan combine butter, sugar, cocoa, and milk.
  • Set over medium heat, and cook stirring frequently until it reaches a full boil.
  • Allow the mixture to boil for 60 seconds without stirring.
  • Remove from heat, immediately add in vanilla and Nutella.  Stir until fully combined.
  • Add in the quick oats and stir until the oats are completely incorporated into the mixture.
  • Using a medium (2 Tbsp) cookie scoop or two spoons, drop mixture onto lined baking sheets.
  • Allow to rest at room temperature until set, about 20 – 30 minutes.  Then the cookies are ready to serve and enjoy!
