Ingredients

Ingredients for Cookie butter rice krispie treats - rice krispie cereal, butter, marshmallows and cookie butter.
  • Rice Krispies Cereal. Make sure the cereal is fresh and not stale.
  • Salted Butter. The extra salt is perfect with the melted marshmallows.
  • Mini Marshmallows. I like to use a bag of mini marshmallows instead of the larger size.
  • Cookie Butter. You can use any brand you prefer.

  • Step 1. Prepare the pan. Spray an 8 or 9 inch square baking pan with a non-stick cooking spray.

Step 2. Get out a mixing bowl and add the cereal. Then in a medium saucepan, heat the butter until completely melted. Once melted, add the marshmallows and stir in the biscoff cookie butter. Stir constantly until the mixture is combined and melted.

Step 3. Next, pour the melted marshmallow mixture over the cereal. You’ll want to work quickly as the mixture will harden fast. Stir the cereal with a spatula until the cereal is coated.

Step 4. Spread the mixture into the square baking dish. Gently press the mixture into the pan. I like to spray a piece of wax paper with cooking spray and use this to press the mixture down into the pan.

Step 5. Allow the mixture to sit for 30-60 minutes. Then slice and enjoy!

Storage

Store the rice crispy treats at room temperature for up to 1 week. Do not store in the refrigerator as the Rice Krispie treats will dry out and the texture will not be the same.

If you need them to last longer, freeze them covered tightly in plastic wrap. Please note the texture will change once frozen and they will not be as ooey gooey.

Pro Tips

  • Gently press the mixture. Don’t push the Rice Krispy mixture too hard into the pan. The harder you press, the firmer the final product will be.
  • Thinner treats. Press the mixture into a 9×13 pan if you prefer a thinner bar.
  • Fresh ingredients. Don’t use stale marshmallows or rice krispie treats. The recipe will not turn out the same.
  • Don’t over stir the mixture. Stir the mixture until just combined. The bars will harden once set if you stir excessively.
  • Cut into bars. Spray a large sharp knife with cooking spray. Wipe the knife clean after each cut to remove any residue. This will ensure nice clean bars every time.
  • Precise measurements. In order for the bars to hold their shape, it is imperative to use exact measurements. Too much cereal will make the bars dry and excessive marshmallows will make the bar lose their shape.

    While this recipe is super easy and calls for minimum ingredients, it is important to follow the instructions precisely.

Why Are My Rice Krispie Treats Hard?

Bars that are too hard are usually the result of using high heat to melt the ingredients. The butter and marshmallows should be melted using medium heat.

While this takes a few extra minutes, the final product will be soft and gooey. It is well worth the extra time for the perfect bars.
