Variations

  • Chocolate Chunk Brownies – Mix chocolate chunks, milk chocolate chips or semi-sweet chocolate chips into the brownie batter for extra richness.
  • Nutty S’mores – Add chopped walnuts or pecans to the batter or sprinkle on top for crunch.
  • Peanut Butter Twist – Swirl peanut butter into the brownie batter before baking for a nutty flavor.
  • Caramel S’mores – Drizzle caramel sauce over the marshmallow topping for added gooey sweetness.

How to Make S’mores Brownies

Step 1. Prepare the oven and pan. Preheat the oven to 350 degrees. Line the pan with foil or parchment paper, leaving some overhang, and then butter the foil or use cooking spray and set aside.

Step 2. Stir together the graham cracker crumbs and sugar in a medium bowl mixing the ingredients well. Then add the melted butter. Whisk together until blended.

Storage

Room Temperature – Store cooled brownies in an airtight container for up to 2 days.

Refrigerator – Keep in an airtight container in the fridge for up to 5 days. Allow brownies to come to room temperature or warm slightly before serving.

Freezer – Wrap individual bars tightly in plastic wrap and place in a freezer-safe container for up to 2 months. Thaw at room temperature or warm in the oven before serving.

Toppings Tip – If storing for later, add extra graham cracker pieces or mini marshmallows just before serving to maintain texture.

Pro Tips

  • Even crust layer – Press the graham cracker crumbs firmly into the pan to create a sturdy base.
  • Use mini marshmallows – They melt evenly and create the classic gooey s’mores texture.
  • Avoid overbaking – Brownies continue to set as they cool; remove them from the oven when a toothpick comes out with a few moist crumbs.
  • Extra crunch – Sprinkle broken graham cracker pieces on top for added texture and authentic s’mores flavor.
  • Chocolate boost – Add chocolate chips or chunks to the brownie batter for an even richer chocolate experience.
  • Serve slightly warm – Brownies taste best when the marshmallow topping is soft and gooey.

Instructions

  • Preheat oven to 350 degrees F. Butter a 9×13-inch baking pan. Line the pan with foil, leaving some overhang, and then butter the foil; set aside.
  • Combine the graham cracker crumbs, sugar , mixing well. Add the melted butter and, using a fork, toss until the entire mixture is moist. Dump the graham cracker mixture into the prepared baking pan, pressing it into an even layer. Bake for about 15 minutes, or until golden brown.
  • Meanwhile, prepare your brownie recipe. Pour the brownie batter over the cooked graham cracker crust, spreading it into an even layer. Bake the brownies according to the directions.
  • As soon as the brownies come out of the oven, switch the oven to broil. Pour the bag of mini marshmallows onto the brownies, covering it in an even layer. Pop the pan back in the oven for a few minutes. Keep a close eye on them – you want them to start to char so you get that s’mores flavor, but don’t want to completely burn them.
  • As soon as the pan comes out of the oven, top the marshmallow layer with the pieces of graham cracker, pressing down slightly so that the pieces of graham cracker get nestled into the marshmallow.
  • Cool completely and then cut into squares. Store at room temperature in an airtight container.

It is supposed to be 3/4 of a stick of butter or 1/4 of a cup, not a cup for the crust.
