You get all of that yummy s’more’s flavor that is so amazing in one amazing little brownie. These brownies start with a graham cracker crust, then brownie is baked and then topped with roasted marshmallows.

We love brownies but this recipe takes brownies to the next level. No need for a campfire when you can make these ooey gooey brownies.

Ingredients

  • Graham Cracker Crumbs. You can buy store bought or make your own crumbs.
  • Butter. It needs to be melted.
  • Brownie Boxed Mix. Use any brand you prefer.
  • Mini Marshmallows. The mini size makes this perfect for the bars.
  • Additional Graham Crackers. These are broken into pieces.

How to Make S’mores Brownies

  • Step 1. Prepare the oven and pan. Preheat the oven to 350 degrees. Line the pan with foil, leaving some overhang, and then butter the foil or use cooking spray and set aside.

Step 2. Stir together the graham cracker crumbs and sugar in a medium bowl mixing the ingredients well. Then add the melted butter. Whisk together until blended.

Step 3. Press the graham cracker mixture into the prepared pan. Press into an even layer. Then bake for about 15 minutes, or until golden brown.

Step 4. Make the fudgy brownies according to the box instructions in a large mixing bowl.

Step 5. Then pour the brownie layer over the cooked graham cracker layer, spreading it into an even layer with a rubber spatula. Bake the brownies according to the directions.

Step 6. Switch the oven to broil. Pour the bag of mini marshmallows on the brownies. Keep a close eye on them so they don’t burn.

Step 7. As soon as the pan comes out of the oven, top the marshmallow layer with the graham cracker pieces. Finally, cool and serve. Cut with a sharp knife to get clean cuts.

Storage

Store brownies in an airtight container at room temperature.

Can You Freeze This Recipe?

To freeze these brownies, once they are cut into squares wrap each individual brownie in plastic wrap. Then place in a freezer safe container. The brownies will stay fresh for up to 3 months.

Pro Tips

  • Baking Dish – This recipe is perfect in a 9ร—13 baking dish.  It really makes the brownies the perfect thickness. You can also use a square 8-inch pan for a thicker brownie.
  • Line Pan – You definitely want to line your pan with foil or parchment paper. The chocolate and marshmallows can get a little sticky and messy. The foil will help make clean up much easier.
  • Use Disposable Pan – Now, I will tell you another tip that I often do if I really want zero cleanup. I use a disposable pan. Itโ€™s nice to just be able to toss the dish.
  • Graham Cracker Crust – It is also helpful to use a food processor to get the graham crackers really fine. However, if you donโ€™t have a food processor, you can also crush the graham cracker sheets in a ziplock bag with a rolling pin.
  • Make Homemade Brownies – You can make homemade brownies with cocoa powder if you prefer. I love Easy One Bowl Brownies.
  • Toppings. Add semi-sweet chocolate chips, milk chocolate chips or peanut butter chips on top. Try Sea Salt on top for a sweet and salty combination.

  • For the brownie part:
  • 1 box of brownie mix – for the 9×13 size prepared according to directions
  • 1 bag mini marshmallows
  • Additional graham crackers broken into pieces

Instructions

  • Preheat oven to 350 degrees F. Butter a 9×13-inch baking pan. Line the pan with foil, leaving some overhang, and then butter the foil; set aside.
  • Combine the graham cracker crumbs, sugar , mixing well. Add the melted butter and, using a fork, toss until the entire mixture is moist. Dump the graham cracker mixture into the prepared baking pan, pressing it into an even layer. Bake for about 15 minutes, or until golden brown.
  • Meanwhile, prepare your brownie recipe. Pour the brownie batter over the cooked graham cracker crust, spreading it into an even layer. Bake the brownies according to the directions.
  • As soon as the brownies come out of the oven, switch the oven to broil. Pour the bag of mini marshmallows onto the brownies, covering it in an even layer. Pop the pan back in the oven for a few minutes. Keep a close eye on them – you want them to start to char so you get that s’mores flavor, but don’t want to completely burn them.
  • As soon as the pan comes out of the oven, top the marshmallow layer with the pieces of graham cracker, pressing down slightly so that the pieces of graham cracker get nestled into the marshmallow.
  • Cool completely and then cut into squares. Store at room temperature in an airtight container.

    It is supposed to be 3/4 of a stick of butter or 1/4 of a cup, not a cup for the crust.
