S’mores Brownies Recipe:

Once you make this s’mores brownies recipe, you will wonder why you didn’t make this sooner. The secret is the brownie mix and it gives the bars the most decadent layer of chocolate.

You get all of that yummy s’mores flavor that is so amazing in one amazing little brownie. These brownies start with a graham cracker crust, then brownie is baked and then topped with roasted marshmallows.

We love brownies but these this recipe takes brownies to the next level. No need for a campfire when you can make these ooey gooey brownies.

Tips:

  • Baking Dish – This recipe is perfect in a 9×13 baking dish.  It really makes the brownies the perfect thickness. You can also a square pan for a thicker brownie.
  • Line Pan with Foil – You definitely want to line your pan with foil. The chocolate and marshmallows can get a little sticky and messy. The foil will help make clean up much easier.
  • Use Disposable Pan – Now, I will tell you another tip that I often do if I really want zero cleanup. I use one of these  disposable pans. It’s nice to just be able to toss the dish. Just do what works best for you. 
  • Graham Cracker Crust – It is also helpful to use a food processor to get the graham crackers really fine. I highly suggest you use a nice food processor like these on Amazon if you don’t have one. However, if you don’t have a food processor, you can also crush the graham cracker sheets in a ziplock bag with a rolling pin.
  • Make Homemade Brownies – You can make homemade brownies with cocoa powder if you prefer. Boxed brownies are easy to use, and taste great.

Ingredients:

  • Graham Cracker Crumbs
  • Granulated Sugar
  • Butter- (melted)

For the Brownie portion:

  • Brownie Boxed Mix
  • Mini Marshmallows
  • Additional Graham Crackers(broken into pieces)

How to make S’mores Brownies:

  • Prepare oven and pan – Preheat oven to 350 degrees. Butter a 9×13-inch baking pan. Line the pan with foil, leaving some overhang, and then butter the foil or use cooking spray and set aside.
  • Mix together crumbs and sugar – Combine the graham cracker crumbs and granulated sugar in a medium bowl mixing the ingredients well.

  • Add butter – Add the melted butter and using a fork, toss until the entire mixture is moist.
  • Press crust into baking dish – Dump the graham cracker mixture into the prepared pan, pressing it into an even layer. Bake for about 15 minutes, or until golden brown.

  • Prepare Brownies – Meanwhile, prepare your brownie recipe. Pour the brownie batter over the cooked graham cracker crust, spreading it into an even layer. Bake the brownies according to the directions.

  • Topped cooked brownies with marshmallows – As soon as the brownies come out of the oven, switch the oven to broil. Pour the bag of mini marshmallows onto the brownies, covering it in an even layer.

  • Broil Marshmallows – Pop the pan back in the oven for a few minutes. Keep a close eye on them – you want them to start to char or get lightly brown so you get that s’mores flavor, but don’t want to completely burn them.
  • Top with crushed graham crackers – As soon as the pan comes out of the oven, top the marshmallow layer with ½ cup of graham cracker pieces, pressing down slightly so that the pieces of graham cracker get nestled into the marshmallow.
  • Cool and Serve – Cool completely on a wire rack and then cut into squares. Store at room temperature in an airtight container. You can also drizzle with melted chocolate or top with chocolate bars.

How to Store:

Store brownies in a air tight container at room temperature.

Can you freeze:

To freeze these brownies, once they are cut into squares wrap each individual brownie in plastic wrap. Then place in a freezer safe container. The brownies will stay fresh for up to 3 months.
